PACIFIC RIM PESTO
  • Ingredients
  • 3 cloves garlic
  • 2 serrano chilies
  • 1 bunch cilantro
  • 1/2 bunch fresh mint
  • 1/3 cup toasted macadamia nuts
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1/2 cup vegetable oil
Directions
  1. Peel garlic and coarsely chop
  2. Trim ends from serrano chilies and slice
  3. Cut top of cilantro from stems
  4. You should have a packed cup of cilantro
  5. Remove leaves from mint stems and coarsely chop. Place garlic, chilies, cilantro, mint, macadamia nuts and salt in food processor
  6. Pulse to chop and combine
  7. With processor running, add the lemon juice and vegetable oil to make a paste.
