ROASTED GARLIC PORT SAUCE
  • Ingredients
  • 1 large head garlic
  • 1 tablespoon olive oil
  • 4 cups chicken broth, divided use
  • 1 medium shallot
  • 3 tablespoons unsalted butter, divided use
  • 1/2 cup port wine
  • Salt and pepper to taste
Directions
  1. Slice top off garlic to expose the cloves
  2. Lay the garlic on a sheet of heavy-duty aluminum foil and drizzle with olive oil
  3. Wrap garlic in foil and roast at 400 degrees for 1 hour
  4. Cool slightly and then squeeze the garlic out into a blender
  5. Add 1/2 cup chicken broth and puree
  6. Peel and finely chop the shallot
  7. Melt 1 tablespoon butter in a 3 quart saucepan over medium high heat
  8. Add the shallot and toss until tender, about 2 minutes
  9. Add the port and bring to a boil, scraping up any browned bits from the bottom of the pan
  10. Cook until only 2 tablespoons port remain
  11. Add the garlic broth mixture and the remaining chicken broth to the saucepan and bring to a boil
  12. Cook until liquid is reduced by half
  13. Remove from heat and whisk in the remaining 2 tablespoons butter
  14. Season to taste with salt and pepper.
