QUICK MUSTARD SAUCE
  • Ingredients
  • 2 small shallots
  • 6 sprigs Italian parsley
  • 1/2 cup dry vermouth
  • 1 cup heavy whipping cream
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste
Directions
  1. Peel and finely chop the shallots
  2. Remove leaves from parsley stems and finely chop the leaves. Place shallots in a medium saucepan with wine
  3. Bring to a boil and cook until most liquid evaporates, about 4 minutes
  4. Add the whipping cream and bring to a simmer
  5. Cook until sauce is reduced slightly, about 2 minutes
  6. Whisk in the mustard and simmer for 2 minutes longer to blend flavors
  7. Season to taste with salt and pepper and stir in parsley.
