SHIITAKE MUSHROOM SAUCE
  • Ingredients
  • 3 cloves garlic
  • 1 large shallot
  • 8 ounces fresh shiitake mushrooms
  • 3 sprigs fresh thyme
  • 2 tablespoons unsalted butter
  • 1/2 cup dry white wine or vermouth
  • 3/4 cup chicken broth
  • 1 cup heavy whipping cream
  • Salt and pepper to taste
Directions
  1. Peel and finely chop garlic
  2. Peel and finely dice shallot
  3. Remove stems from mushrooms and wipe clean with a damp paper towel
  4. Cut mushrooms across into thin slices
  5. Remove leaves from thyme stems
  6. Melt butter in a large skillet over medium high heat
  7. Add the garlic and shallots and cook until tender, about 3 minutes
  8. Stir in the mushrooms and thyme and cook until mushrooms give off their liquid and then liquid evaporates, about 7 minutes
  9. Stir in wine and cook until absorbed, scraping up the browned bits from the bottom of the pan
  10. Add the chicken broth and cream and bring to a boil
  11. Boil until sauce reduces to desired consistency, about 4 minutes
  12. Season to taste with salt and pepper.
