Fresh Pineapple Chutney Sauce
  • Ingredients
  • 1 cup chopped fresh pineapple
  • 2 cups unsweetened pineapple juice
  • 1/2 cup white wine vinegar
  • 1/2 cup golden brown sugar
  • 1 pinch saffron threads
  • 1 jalapeno chili, seeded and diced
Directions
  1. Place the pineapple and pineapple juice in a large saucepan
  2. Add the vinegar, brown sugar, saffron and jalapeno
  3. Bring to a simmer and continue cooking until liquid is reduced by half. Yield: 2 cups SUGGESTED USE: This simple sauce has the sweet sour flavors of a chutney, hence its name
  4. It is delicious over any type of citrus marinated fish or chicken or even pork.
