SWISS CHEESE SHRIMP TOASTS
  • Ingredients
  • 1 handful fresh parsley
  • 3 sprigs fresh thyme
  • 2 tablespoons melted butter
  • 10 thin slices white bread
  • 6 ounces cooked small shrimp
  • 1/2 cup shredded Swiss cheese
  • 1/3 cup mayonnaise
  • 1 teaspoon paprika
Directions
  1. Wash and dry the parsley and thyme
  2. Finely mince both
  3. Stir thyme into melted butter
  4. Preheat oven to 400 degrees
  5. Using a 2 inch round biscuit cutter, cut 2 circles from each bread slice
  6. Chop enough of the scraps of bread to make 1/2 cup
  7. Brush bread rounds with thyme butter and arrange on a baking sheet
  8. Bake for 8 minutes or until golden
  9. Chop the shrimp and combine with the chopped bread, Swiss cheese and mayonnaise to make a paste
  10. Spread shrimp on toast rounds and sprinkle with paprika
  11. Broil briefly until bubbly
  12. Sprinkle with parsley.
