GOAT CHEESE AND PISTACHIO SPREAD WITH TUSCANY TOASTS
  • Ingredients
  • 1 bunch chives
  • 1/3 cup toasted salted pistachio nuts
  • 7 cloves garlic
  • 1/2 cup olive oil
  • 1 crusty baguette
  • 1/2 cup freshly grated Parmesan cheese
  • 11 ounces soft goat cheese
  • 1/2 cup unsalted butter, softened
Directions
  1. Chop enough chives to make 1/4 cup
  2. Cut a few more into 1-inch lengths for garnish
  3. Set aside
  4. Chop the pistachios and set aside
  5. Preheat oven to 400 degrees
  6. Peel garlic and mince
  7. Stir 6 cloves garlic into the olive oil and let stand for at least 15 minutes and up to 2 hours
  8. Slice the baguette diagonally into 24 slices, 1/2-inch thick
  9. Brush with garlic oil and sprinkle with Parmesan
  10. Bake for 8 minutes or until golden brown
  11. Mash the goat cheese and butter together in a medium bowl
  12. Stir in the remaining clove minced garlic, the minced chives and the chopped pistachios
  13. Transfer to a serving bowl
  14. Cover and refrigerate several hours or overnight
  15. Garnish with chives and serve with toasts for spreading.
