BRIE CHEESE TRUFFLES
  • Ingredients
  • 1-1/2 cups toasted walnuts
  • 1/4 red onion
  • 4 sprigs fresh Italian parsley
  • 3 ounces cream cheese, softened
  • Salt and pepper to taste
  • 12 ounces ripe Brie cheese
Directions
  1. Finely chop the walnuts and place in a shallow bowl
  2. Finely dice the onion and place in a medium bowl
  3. Remove the leaves from the parsley stems and mince
  4. Add to the onion
  5. Add the cream cheese and some salt and pepper to taste
  6. Mix together to blend thoroughly
  7. Using the cheese knife, cut off the rind from the Brie and cut into 18 pieces
  8. Flatten each piece of Brie into a circle and place 1 teaspoon of the cream cheese mixture in the center of each
  9. Gently enclose the filling with the Brie and roll into a ball. Roll the cheese balls in the walnuts and place in candy papers
  10. These refrigerate for 24 hours but remove from refrigerator 30 minutes before serving.
