CILANTRO PESTO MARINATED GRILLED SHRIMP SKEWERS
Ingredients
2 cloves garlic
2 serrano chilies
1 bunch cilantro
1 bunch Italian parsley
3 tablespoons pine nuts
3 tablespoons freshly grated parmesan cheese
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup sour cream
1 pound extra-large shrimp, cleaned
Directions
Peel and mince garlic
Slice serrano chilies
Remove leaves from cilantro to make 1 cup
Coarsely chop parsley to make 1/2 cup
In food processor place the garlic, chilies, cilantro, parsley, pine nuts, parmesan cheese and salt
Pulse to chop
With machine running, pour in the oil to make a paste
Remove 3 tablespoons pesto to a small bowl and stir in sour cream
Toss shrimp with pesto, cover and refrigerate 2 hours. Thread shrimp on skewers and grill for 3 minutes per side
Remove from skewers and serve with pesto sour cream for dipping.
