CILANTRO PESTO MARINATED GRILLED SHRIMP SKEWERS
  • Ingredients
  • 2 cloves garlic
  • 2 serrano chilies
  • 1 bunch cilantro
  • 1 bunch Italian parsley
  • 3 tablespoons pine nuts
  • 3 tablespoons freshly grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup sour cream
  • 1 pound extra-large shrimp, cleaned
Directions
  1. Peel and mince garlic
  2. Slice serrano chilies
  3. Remove leaves from cilantro to make 1 cup
  4. Coarsely chop parsley to make 1/2 cup
  5. In food processor place the garlic, chilies, cilantro, parsley, pine nuts, parmesan cheese and salt
  6. Pulse to chop
  7. With machine running, pour in the oil to make a paste
  8. Remove 3 tablespoons pesto to a small bowl and stir in sour cream
  9. Toss shrimp with pesto, cover and refrigerate 2 hours. Thread shrimp on skewers and grill for 3 minutes per side
  10. Remove from skewers and serve with pesto sour cream for dipping.
