CAESAR BLUE CHEESE SALAD
  • Ingredients
  • 6 large white button mushrooms
  • 1 large head romaine lettuce
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup crumbled blue cheese
  • 1/4 cup toasted pine nuts
  • Dressing:
  • 2 cloves garlic, peeled
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 3/4 cup extra-virgin olive oil
Directions
  1. Wipe mushrooms clean with a damp paper towel and thinly slice
  2. Coarsely chop lettuce and place in a salad bowl
  3. Toss with mushrooms, bacon, blue cheese and pine nuts. For dressing: Combine all ingredients in the food processor and blend until smooth
  4. Season to taste with salt and pepper
  5. Cover and refrigerate until serving time and up to 24 hours
  6. Toss with salad and combine well.
