SHRIMP PASTA CAESAR SALAD WITH TOMATOES
  • Ingredients
  • 3 green onions
  • 1 small bunch fresh basil
  • 1 cup grape or other tiny tomatoes
  • 1 medium head Romaine lettuce
  • 1 pound extra-large shrimp,
  • shelled, deveined and cooked
  • 3 cups cooked bow-tie pasta
  • Dressing:
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, peeled
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup mayonnaise
  • 1 teaspoon Worcestershire sauce
Directions
  1. Trim ends from green onions and slice
  2. Stack basil leaves and slice across into julienne strips
  3. Cut the tomatoes in half
  4. Cut lettuce across in 1-inch thick slices. Toss these all with shrimp and pasta in a large salad bowl. For dressing: Combine all ingredients in the food processor and blend until smooth
  5. Season to taste with salt and pepper
  6. Cover and refrigerate until serving time and up to 24 hours
  7. Toss with salad and combine well.
