MEXICAN COLE SLAW WITH SALSA DRESSING
  • Ingredients
  • 1 medium head green cabbage
  • 1 red bell pepper
  • 1/2 small red onion
  • 1 bunch cilantro
  • 1 cup frozen corn, thawed
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream
  • 1/3 cup medium salsa
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon ground cumin
Directions
  1. Cut cabbage in half and remove the core
  2. Cut into thin fine shreds
  3. Cut the red pepper into medium dice
  4. Finely chop red onion to make 1/2 cup
  5. Remove cilantro leaves and finely chop
  6. Toss cabbage, pepper, red onion, cilantro and corn in a large bowl
  7. In a medium bowl whisk together the mayonnaise, sour cream, salsa, vinegar and cumin
  8. Season to taste with salt and pepper
  9. Up to 2 hours before serving, toss the dressing with the slaw adding only enough dressing to coat well
  10. Cover and chill until serving time.
