BLACK BEAN AND RED PEPPER SALAD
  • Ingredients
  • 2 large red bell peppers
  • 1 yellow bell pepper
  • 1 small red onion
  • 1/2 bunch Italian parsley
  • 6 leaves fresh basil
  • 2 cloves garlic
  • 1 (15-ounce) can black beans,
  • rinsed and drained
  • 1-1/2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon grated orange zest
Directions
  1. Remove seeds and membranes from peppers and cut into medium dice
  2. Chop enough onion to make 1/2 cup
  3. Remove parsley leaves and chop
  4. Stack basil leaves and chop
  5. Peel and mince garlic
  6. Combine the peppers, onion, parsley, basil, garlic and beans in a medium bowl
  7. Add the vinegar, oil and orange zest, tossing well
  8. Season to taste with salt and pepper and let stand 30 minutes at room temperature or refrigerate up to 4 hours.
