PROSCIUTTO WRAPPED ASPARAGUS WITH BLUE CHEESE
  • Ingredients
  • 32 asparagus spears
  • 3 fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 1/2 cup vegetable oil
  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon fresh lemon juice
  • 32 slices prosciutto, 4 inches long
  • 4 ounces blue cheese, crumbled
  • 8 butter lettuce leaves
Directions
  1. Trim asparagus to 4 inch lengths
  2. Cook asparagus with 2 tablespoons water in a covered dish on HIGH power in the microwave for 2 to 3 minutes
  3. Drain and rinse in cold water; Drain well
  4. Stack basil leaves and mince
  5. Combine with vinegar, oils, salt, pepper and lemon juice in a small bowl, whisking to combine. Wrap each asparagus spear in a slice of prosciutto
  6. Arrange 4 wrapped asparagus on each lettuce leaf and top with blue cheese
  7. Drizzle with dressing.
