BLUE CHEESE POTATO SALAD
  • Ingredients
  • 3 pounds small red potatoes
  • 3 green onions
  • 3 stalks celery
  • 1/4 cup dry white wine
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1-1/2 tablespoons cider vinegar
  • 1-1/2 tablespoons Dijon mustard
  • 1/4 pound blue cheese, crumbled
Directions
  1. Quarter potatoes or cut into 1-inch cubes
  2. Place in a large pot and cover with cold water
  3. Bring to a boil, adding 2 teaspoons of salt when water boils
  4. Simmer until potatoes are tender, about 10 minutes longer
  5. Drain and transfer to a bowl
  6. Add wine and season with salt and pepper
  7. Cool completely. Slice the green onions and cut the celery into small dice
  8. Add to potatoes along with remaining ingredients
  9. Mix well
  10. Cover and refrigerate up to 24 hours.
