POTATO SALAD WITH CREAMY ORANGE DRESSING
  • Ingredients
  • 5 pounds russet potatoes
  • 1 onion
  • 1 cup sweet gherkin pickles
  • 1 (8-ounce) bottle French dressing
  • (the orange kind)
  • 4 hard boiled eggs
  • 1 to 2 cups mayonnaise
  • Salt and pepper
Directions
  1. Peel potatoes and cut into 1-inch cubes
  2. Place potatoes in a large pot and cover with cold water
  3. Bring water to a boil, adding 2 teaspoons salt as water boils
  4. Simmer until potatoes are tender, about 10 minutes longer
  5. Drain and transfer to a large bowl
  6. Chop the onion and cut the pickles into medium dice
  7. Add to the hot potatoes along with the French dressing, tossing to coat well
  8. Let stand or chill until cold - up to overnight
  9. Shortly before serving, slice the hard-boiled eggs and add to the salad with enough mayonnaise to make a creamy dressing
  10. Season to taste with salt and pepper
  11. Refrigerate until serving time and up to 24 hours longer.
