ARTICHOKE, POTATO AND RED PEPPER SALAD
  • Ingredients
  • 1 pound small white potatoes
  • 1 (6-ounce) jar marinated artichoke hearts,
  • undrained
  • 2 red bell peppers, roasted
  • 2 green onions
  • 4 tablespoons fresh lemon juice
Directions
  1. Slice potatoes and place in a medium pot of cold water
  2. Bring water to a boil adding 1 teaspoon salt to water as it boils
  3. Simmer potatoes until tender, about 10 minutes. Drain and transfer to a medium bowl
  4. Drain artichoke hearts, reserving liquid
  5. Dice artichoke hearts and toss with hot potatoes
  6. Add lemon juice and cool to room temperature
  7. Cut roasted peppers into julienne strips
  8. Slice green onions
  9. Add to potato salad and season to taste with salt and pepper
  10. Serve immediately or chill, but bring to room temperature before serving.
