ITALIAN CHOPPED SALAD
  • Ingredients
  • 1 medium red onion
  • 2 tablespoons white wine vinegar
  • 1 large head romaine lettuce
  • 1 red bell pepper
  • 1 fresh fennel bulb
  • 8 ounces pitted kalamata olives
  • 2 ounces thinly sliced Italian dry salami
  • 1 (15-ounce) can garbanzo beans, rinsed and
  • drained
  • 1/2 cup feta cheese, crumbled
  • Dressing:
  • 6 tablespoons extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
Directions
  1. Thinly slice the onion and place in a small bowl
  2. Cover with water and stir in the vinegar
  3. Let stand at least 10 minutes and then drain well
  4. Coarsely chop the lettuce
  5. Cut the red pepper and fennel into medium dice
  6. Slice the olives
  7. Stack the salami slices and cut into julienne strips
  8. For dressing, whisk all ingredients in a small bowl
  9. Season to taste with salt and pepper
  10. Combine all salad ingredients in a large bowl and toss with dressing
  11. Serve immediately.
