CHOPPED SALAD WITH SMOKY CILANTRO DRESSING
  • Ingredients
  • Dressing:
  • 1/2 bunch cilantro
  • 2 cloves garlic
  • 1 chipotle chili in adobo
  • 3 green onions
  • 1/4 cup fresh lime juice
  • 1 teaspoon Dijon mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • Salad:
  • 1 small head romaine
  • 1/4 head green cabbage
  • 1 roasted red pepper
  • 1/4 medium jicama
  • 3/4 cup frozen corn, thawed
  • 1/2 cup crumbled feta cheese
  • 1 cup crushed blue corn tortilla chips
Directions
  1. For dressing, remove cilantro leaves from stems
  2. Peel garlic and cut in half
  3. Mince chipotle and green onions
  4. Place cilantro, garlic, chipotle, lime juice, mustard, sugar and salt in blender and puree
  5. Whisk in oil and green onions
  6. Coarsely chop romaine, cabbage, pepper and jicama
  7. Toss together with corn and dressing
  8. Top with cheese and chips and serve immediately.
