CHOPPED SALAD WITH SALSA VERDE DRESSING
  • Ingredients
  • Dressing:
  • 4 tomatillos
  • 1/2 bunch cilantro
  • 1/2 jalapeno chili
  • 2 cloves garlic
  • 3 green onions
  • 6 tablespoons fresh lime juice
  • 1/2 cup vegetable oil
  • Salad:
  • 1 small head romaine
  • 1/4 head green cabbage
  • 3 plum tomatoes
  • 1/4 medium jicama
  • 1 avocado
  • 3/4 cup frozen corn, thawed
  • 1/2 pound cooked medium shrimp
  • 1/2 cup crumbled feta cheese
  • 1 cup crushed blue corn tortilla chips
Directions
  1. Remove husks from tomatillos and rinse
  2. Cut into quarters
  3. Remove cilantro leaves and seeds from jalapeño
  4. Peel garlic and chop green onions
  5. Place all in blender with lime juice and puree
  6. Whisk in oil
  7. Coarsely chop lettuce and cabbage and place in a salad bowl
  8. Quarter tomatoes and scoop out seeds
  9. Peel and cut jicama into medium dice
  10. Peel and cut avocado into medium dice
  11. Chop shrimp
  12. Toss all together with dressing and serve.
