CHICKEN SALAD WITH HOISIN DRESSING AND WON TON CRISPS
  • Ingredients
  • 20 won ton squares
  • 2 cups vegetable oil
  • 1 medium head romaine lettuce
  • 3 green onions
  • 1 small red bell pepper
  • 1 small cucumber, peeled and seeded
  • 1 roasted chicken
  • 1/3 cup roasted salted cashews
  • Dressing:
  • 2 tablespoons hoisin sauce
  • 1/3 cup rice vinegar
  • 6 tablespoons vegetable oil
  • 1 teaspoon chili paste with garlic
  • 1/4 cup sugar
  • 2 teaspoons soy sauce
Directions
  1. Cut won tons skins into 1/4 inch thick strips
  2. Heat oil in wok or skillet and fry won tons in batches
  3. Drain on paper towels
  4. Whisk together all the dressing ingredients and chill until serving time
  5. Cut lettuce across into 1/2-inch thick shreds
  6. Cut green onions on a diagonal
  7. Cut red pepper and cucumber into medium dice
  8. Remove skin and bones from chicken and shred
  9. Toss all together in a large bowl and add the won ton crisps, cashews and dressing.
