CUBAN CHICKEN SALAD WITH AVOCADOS AND MANGOES
  • Ingredients
  • 2 large firm ripe mangoes
  • 2 large avocados
  • 4 cups cooked diced chicken
  • 10 ounces mixed baby greens
  • 3/4 cup toasted cashews
  • Dressing:
  • 2 cloves garlic
  • 3/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon grated orange zest
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
Directions
  1. Peel mangoes and cut into medium dice
  2. Peel avocados and cut into medium dice
  3. Rinse avocados in a colander to retard discoloration. For dressing, peel garlic and mince
  4. Whisk garlic with orange and lime juices, zest, honey and soy sauce
  5. In a medium bowl combine the chicken, mango and avocado. Toss with 1/2 cup dressing
  6. Toss greens with remaining dressing and divide among six plates
  7. Top with chicken mixture and a sprinkling of cashews.
