GRILLED CHICKEN, BLACK BEAN AND CORN SALAD WITH SALSA
  • Ingredients
  • Dressing:
  • 1/4 cup fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup olive oil
  • 2 tablespoons prepared medium salsa
  • Salad:
  • 4 boneless skinless chicken breast halves
  • 1 large head romaine lettuce
  • 2 medium carrots
  • 1/2 hot house cucumber
  • 2 (15-ounce) cans black beans,
  • rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 avocado
  • 1 cup crushed blue corn tortilla chips
Directions
  1. Whisk together dressing ingredients in a small bowl. Trim chicken and pound to an even 1/2-inch thickness
  2. Pour 1/3 of the dressing over the chicken and let stand 30 minutes
  3. Grill chicken 4 minutes per side
  4. Cut on a diagonal into 1/2-inch thick slices. Cut lettuce across into 1-inch strips
  5. Peel carrots and thinly slice
  6. Thinly slice the cucumber
  7. Arrange lettuce in a bowl and top with carrots, cucumber, beans, corn and medium diced avocado
  8. Top with chicken and then dressing
  9. Toss and serve topped with chips.
