HOISIN PORK AND NAPA SLAW
  • Ingredients
  • 1 head garlic
  • 2 inch piece fresh ginger
  • 6 green onions, divided use
  • 1 pork tenderloin
  • 1/2 cup hoisin sauce
  • 2 tablespoons chili paste with garlic
  • 1/2 cup red wine
  • 1 teaspoon freshly ground pepper
  • Slaw: 1 small bunch basil
  • 1 small head Napa cabbage
  • 2 carrots
  • 1 cup bean sprouts
  • 1/2 cup fish sauce
  • 1/2 cup rice wine vinegar
  • 1-1/2 teaspoons sugar
Directions
  1. Peel and mince garlic and ginger
  2. Chop green onions
  3. Trim pork of all fat and silverskin
  4. Slice pork lengthwise into 3 long thin strips
  5. Mix the garlic, ginger, 1/2 the green onions, hoisin, chili paste, red wine and pepper. Remove and reserve 2 tablespoons
  6. Pour remaining marinade over the pork and let stand 45 minutes
  7. Grill pork 4 to 5 minutes per side
  8. Cut across into thin strips. Stack basil leaves and cut into julienne strips
  9. Cut cabbage into thin strips
  10. Peel carrots and cut into julienne strips
  11. Combine reserved 2 tablespoons marinade with fish sauce, vinegar and sugar
  12. Toss with slaw and pork.
