BLACKENED STEAK SALAD WITH PEPPERS, BLUE CHEESE AND DIJON VINAIGRETTE
  • Ingredients
  • 2 yellow bell peppers
  • 3 tomatoes
  • 1-1/2 pounds beef top sirloin, 1-inch thick
  • 1/4 cup purchased Steak Rub
  • 2 (6-ounce) bags mixed baby greens
  • 3/4 cup crumbled blue cheese
  • Dijon Vinaigrette:
  • 2 tablespoons minced green onion
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
Directions
  1. Cut yellow peppers into julienne strips
  2. Cut tomatoes lengthwise into wedges
  3. Coat steak on both sides with Steak Rub
  4. Let stand 30 minutes
  5. Grill steak 5 to 6 minutes per side
  6. Remove and set aside to cool slightly. Slice into thin strips across the grain
  7. Finely mince the green onions
  8. Whisk together Vinaigrette ingredients and toss with lettuce and yellow peppers
  9. Mound salad on serving plates and top with steak slices, blue cheese and tomatoes.
