COUSCOUS AND FETA CAKES
  • Ingredients
  • 1 small red onion
  • 1 red bell pepper
  • 1/2 yellow bell pepper
  • 2 cloves garlic
  • 3 sprigs fresh dill
  • 3 sprigs Italian parsley
  • 2-1/2 cups water
  • 1 cup couscous
  • 4 tablespoons olive oil
  • 6 ounces crumbled feta cheese
  • 1/2 cup flour
  • 2 eggs, lightly beaten
Directions
  1. Finely dice the onion, red and yellow peppers
  2. Peel and mince the garlic
  3. Remove leaves from dill and parsley sprigs and mince
  4. Heat 1 tablespoon oil in a medium skillet and cook the onion, peppers and garlic until tender
  5. Cool
  6. Bring water to a boil in a medium saucepan and stir in couscous and a pinch salt
  7. Remove from heat and let stand, covered, 10 minutes
  8. Fluff couscous and toss in onion mixture, feta, flour, eggs, dill, parsley, salt and pepper to taste
  9. Heat 1 tablespoon oil in a nonstick skillet over medium high heat
  10. Drop couscous mixture in 1/3 cup mounds and press slightly to form 3 inch cakes
  11. Cook 3 minutes and turn and cook another 3 minutes or until golden and cooked through
  12. Repeat with remaining oil and couscous.
