THAI YAM AND PEPPER CURRY
  • Ingredients
  • 2 red bell peppers
  • 1 medium onion
  • 4 cloves garlic
  • 2 medium orange fleshed yams
  • 1/2 pound snow peas
  • 4 sprigs fresh cilantro
  • 1 tablespoon vegetable oil
  • 1 to 1-1/2 tablespoons Thai green curry paste
  • 1 (14-ounce) can unsweetened coconut milk
  • 1/2 cup water
  • Cooked jasmine rice
Directions
  1. Cut red peppers into Batonnet strips
  2. Slice the onion lengthwise into thin strips
  3. Peel garlic and mince
  4. Peel yams and cut in half lengthwise
  5. Then cut across into 1/4 inch thick half moons
  6. Trim snow peas and mince cilantro leaves
  7. Heat oil in a 4 quart pot over medium high heat
  8. Add the bell peppers and onion and cook until tender and beginning to brown, about 5 minutes
  9. Stir in the garlic and curry paste and cook, stirring 1 minute. Add yams, coconut milk and water and simmer, covered, stirring occasionally, until potatoes are almost tender, about 5 minutes
  10. Add snow peas and simmer, uncovered, until sauce is slightly thickened
  11. Stir in cilantro and serve over rice.
