BLACK & PINTO BEAN BURGERS
  • Ingredients
  • 1/2 medium onion
  • 1/2 carrot, peeled
  • 2 cloves garlic
  • 1 jalapeño chili
  • 3 tablespoons olive oil
  • 1 (15-ounce) can black beans,
  • rinsed and drained
  • 1 (15-ounce) can pinto beans,
  • rinsed and drained
  • 1 cup prepared salsa, medium or mild
  • 2 tablespoons self-rising flour or Bisquick
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 cup mayonnaise
  • 2 to 3 teaspoons adobo sauce from
  • canned chipotle chilies
  • 8 whole grain buns, toasted
Directions
  1. Finely chop onion and carrot
  2. Peel garlic and mince
  3. Cut chili in half and scoop out seeds and membrane and finely mince
  4. Heat 1 tablespoon oil in a nonstick skillet over medium high heat
  5. Add onion, carrot, garlic and chili and saute until tender, 5 minutes
  6. Mash beans and stir in onion mixture, 1/2 cup salsa, flour and spices
  7. Chill 30 minutes
  8. Stir together mayonnaise and adobo sauce and spread on bottom bun
  9. Shape bean mixture into 8 patties
  10. Place on a parchment lined baking pan and brush with oil
  11. Bake at 400 degrees for 15 minutes
  12. Serve on buns and top with remaining salsa.
