BLACK & PINTO BEAN BURGERS
BLACK & PINTO BEAN BURGERS
Ingredients
1/2 medium onion
1/2 carrot, peeled
2 cloves garlic
1 jalapeño chili
3 tablespoons olive oil
1 (15-ounce) can black beans,
rinsed and drained
1 (15-ounce) can pinto beans,
rinsed and drained
1 cup prepared salsa, medium or mild
2 tablespoons self-rising flour or Bisquick
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 cup mayonnaise
2 to 3 teaspoons adobo sauce from
canned chipotle chilies
8 whole grain buns, toasted
Directions
Finely chop onion and carrot
Peel garlic and mince
Cut chili in half and scoop out seeds and membrane and finely mince
Heat 1 tablespoon oil in a nonstick skillet over medium high heat
Add onion, carrot, garlic and chili and saute until tender, 5 minutes
Mash beans and stir in onion mixture, 1/2 cup salsa, flour and spices
Chill 30 minutes
Stir together mayonnaise and adobo sauce and spread on bottom bun
Shape bean mixture into 8 patties
Place on a parchment lined baking pan and brush with oil
Bake at 400 degrees for 15 minutes
Serve on buns and top with remaining salsa.
