TOASTED GARLIC RICE WITH FRESH HERBS
  • Ingredients
  • 1/2 bunch fresh cilantro
  • 1/2 bunch Italian parsley
  • 4 sprigs fresh oregano
  • 12 cloves garlic
  • 2 tablespoons vegetable oil
  • 1-1/2 cups long grain white rice
  • 3 cups chicken broth
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons grated lime zest
Directions
  1. Remove cilantro, parsley and oregano leaves from stems and mince
  2. Set aside
  3. Peel and mince garlic
  4. Heat oil in a large saucepan over medium heat
  5. Add garlic and saute until golden, being careful not to burn
  6. Add rice and stir 2 minutes or until glossy
  7. Add broth and lime juice and salt and bring to a boil
  8. Stir; reduce heat and cook, covered, until rice is tender, 18 to 22 minutes. Turn off heat and let stand 5 minutes
  9. Add herbs and lime zest and fluff with a fork.
