GARLIC MASHED POTATOES
  • Ingredients
  • 2-1/2 pounds russet potatoes
  • 6 cloves garlic, peeled
  • 2 teaspoons salt
  • 1/4 cup butter, cut up
  • 1 cup sour cream or more
  • Salt and pepper to taste
Directions
  1. Peel potatoes and quarter
  2. Place in a large pot of cold water
  3. Peel garlic cloves and add to pot
  4. Bring the water to a boil and then add the 2 teaspoons salt
  5. Continue cooking 15 minutes or until potatoes are very tender
  6. Place the butter and sour cream in the bottom of a large bowl
  7. Force the potatoes and cooked garlic cloves through a ricer into the bowl
  8. Stir to incorporate, adding more sour cream as needed
  9. Season to taste with salt and pepper.
