CREAMY BASIL POTATO MASH
  • Ingredients
  • Pesto: 2 cloves garlic
  • 1 cup fresh basil leaves
  • 1 cup fresh spinach leaves
  • 3 green onions
  • 3 tablespoons pine nuts
  • 1/4 cup freshly grated Parmesan
  • 1/2 teaspoon salt
  • 1/3 to 1/2 cup extra-virgin olive oil
  • 3 pounds russet potatoes
  • 4 tablespoons unsalted butter
  • 3/4 to 1 cup heavy cream, heated
  • Salt and pepper to taste
Directions
  1. Peel garlic
  2. Coarsely chop basil, spinach and green onions
  3. To make the pesto, drop the garlic cloves into a running food processor and process until minced
  4. Stop machine and add spinach, basil, green onion, pine nuts, Parmesan and salt
  5. Pulse to chop
  6. With machine running, add the olive oil to make a paste. Peel potatoes and quarter
  7. Place potatoes in a large pot and cover with cold water
  8. Bring to a boil and add 1 teaspoon salt
  9. Continue to simmer until potatoes are tender, about 15 minutes
  10. Force potatoes through a ricer into a large bowl and stir in the butter and enough cream to make moist rice mashed potatoes
  11. Season with salt and pepper
  12. Swirl pesto through mashed potatoes and serve immediately.
