CHUNKY POTATOES WITH TWO CHEESES AND GARLIC
  • Ingredients
  • 4 pounds russet potatoes
  • 2 heads garlic
  • 2 small shallots
  • 1/4 cup oil-packed sun-dried tomatoes, drained
  • 2 cups heavy whipping cream
  • 2 tablespoons prepared pesto sauce
  • 1/4 teaspoon white pepper
  • 1-1/2 cups grated mozzarella cheese
  • 1-1/2 cups grated Emmentaler (Swiss) cheese
Directions
  1. Peel potatoes and cut into 1/2-inch cubes
  2. Place potatoes in a greased 13x9 inch baking dish
  3. Cover with plastic wrap and cook in the microwave oven on HIGH power for 16 minutes, stirring every 4 minutes or until potatoes are just about tender
  4. Peel garlic and mince
  5. Chop shallots
  6. Mix cream, sundried tomatoes, shallots, garlic, pesto and white pepper in a large bowl
  7. Pour over potatoes; stir gently to coat
  8. Sprinkle both cheeses over potato mixture
  9. Bake at 375 degrees until potatoes are very tender and cheese is golden brown on top, about 45 minutes
  10. Let cool about 10 minutes before serving.
