PEPPER JELLY GLAZED CHICKEN
  • Ingredients
  • 6 plum tomatoes
  • 1 pound medium zucchini
  • 1 bunch cilantro
  • 1 medium onion
  • 4 cloves garlic
  • 3 ears corn
  • 1 tablespoon unsalted butter
  • 2 tablespoons jalapeno pepper jelly
  • 4 teaspoons fresh lime juice
  • 1/2 teaspoon chili powder
  • 4 boneless skinless chicken breast halves
  • 3 tablespoons cream cheese
Directions
  1. Cut tomatoes into quarters lengthwise and cut out seeds
  2. Cut into medium dice
  3. Cut the zucchini to medium dice. Finely chop cilantro
  4. Finely chop onion
  5. Peel and mince garlic
  6. Cut corn from cobs
  7. Melt butter in a large skillet and saute the onion for 3 minutes
  8. Add the tomatoes, zucchini, garlic and corn and cook, covered, until zucchini is tender, about 15 minutes
  9. Stir in cream cheese
  10. Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness
  11. Melt pepper jelly and stir in lime juice and chili powder
  12. Divide in half, setting one aside
  13. Brush chicken with half the jelly and grill 4 minutes per side
  14. Brush with remaining glaze
  15. Serve chicken topped with corn.
