CHIPOTLE CHICKEN THIGHS
  • Ingredients
  • 1 clove garlic
  • 4 sprigs cilantro
  • 8 chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons minced chipotle peppers in adobo
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
Directions
  1. Peel garlic and mince
  2. Remove cilantro leaves from stems and mince
  3. Stir garlic and cilantro into yogurt
  4. Stir in chipotle chilies, lime juice and salt. Remove skin from chicken thighs, wash and thoroughly dry chicken
  5. Place in a casserole dish
  6. Pour yogurt mixture over the chicken, turning to coat each piece
  7. Cover and refrigerate for at least 8 hours and up to 24 hours
  8. Preheat oven to 375 degrees
  9. Remove thighs from the marinade and arrange on a parchment lined baking sheet
  10. Bake for 50 to 60 minutes or until cooked through.
