GREEK CHICKEN BUNDLES
Ingredients
1 clove garlic
3 sprigs fresh oregano
1 large tomato
1/4 red bell pepper
1/4 cucumber
1 green onion
1/2 cup crumbled feta cheese
4 tablespoons olive oil, divided use
2 teaspoons wine vinegar
6 boneless skinless chicken breast halves
2 eggs, lightly beaten
1-1/2 cups croutons, crushed
Directions
Peel and mince garlic
Remove leaves from oregano and mince
Cut tomato in half crosswise, squeeze out the seeds and cut into medium dice
Cut red pepper and cucumber into medium dice
Chop the green onion
Combine all with feta, 1 tablespoon olive oil and vinegar in a small bowl
Wash and thoroughly dry chicken breasts
Trim chicken and pound between two sheets of plastic wrap to an even 1/4-inch thickness
Divide filling among chicken and fold over to enclose, pressing edges to seal
Dip in egg and then in croutons
Preheat oven to 425 degrees
Heat 3 tablespoons olive oil on a baking sheet in oven for 4 minutes
Add chicken and cook 8 minutes; turn and cook 8 to 10 minutes longer or until cooked through.
