BLUE CHEESE AND BACON STUFFED POCKET CHICKEN
Ingredients
1 green onion
3 slices bacon
3/4 cup crumbled blue cheese
6 boneless skinless chicken breast halves
2 eggs, lightly beaten
1-1/2 cups plain dry breadcrumbs
1 teaspoon paprika
4 tablespoons vegetable oil
Directions
Trim ends from green onion and finely chop
Cut bacon across into thin strips
Cook bacon in a nonstick skillet over medium high heat until crispy
Transfer to paper towels to drain
Wash and thoroughly dry the chicken breasts
Cut a pocket in the side of each breast about 2 inches long
Mix bacon, green onion and blue cheese together and stuff into the chicken pockets
Secure each with a toothpick
Coat chicken in the eggs and then dredge in the breadcrumbs mixed with paprika to make a thick crust
Preheat oven to 425 degrees
Heat oil on a baking sheet 4 minutes
Add chicken and cook 7 minutes, turn and cook 7 to 9 minutes longer or until chicken is cooked through.
