THAI GINGER CHICKEN
  • Ingredients
  • 4 dried shiitake mushrooms
  • 1 clove garlic
  • 2 inch piece ginger root
  • 2 shallots
  • 1 serrano chili
  • 1 onion
  • 1/2 red bell pepper
  • 2 sprigs fresh cilantro
  • 1/2 pound boneless skinless chicken breasts
  • 3 tablespoons vegetable oil
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1/2 teaspoon sugar
  • Pinch white pepper
Directions
  1. Soak dried mushrooms in hot water for 30 minutes. Drain, remove stems and thinly slice
  2. Peel and mince the garlic and ginger
  3. Chop shallots and slice chili and onion
  4. Cut bell pepper in julienne strips
  5. Remove cilantro leaves and mince
  6. Heat 1 tablespoon oil in wok and toss in shallots, chili, onions, red pepper and mushrooms
  7. Toss 3 minutes or until tender
  8. Remove to a plate
  9. Add remaining oil and garlic and ginger
  10. Cook 1 minute
  11. Add chicken and toss until cooked through, 4 minutes
  12. Add oyster and fish sauces, sugar and pepper and toss to combine
  13. Toss in cooked vegetables and season to taste
  14. Sprinkle with cilantro to serve.
