PORK TENDERLOIN WITH HONEY GINGER SAUCE
  • Ingredients
  • 2-inch piece fresh ginger
  • 1 shallot
  • 2 cloves garlic
  • 2 pork tenderloins
  • 2 tablespoons honey
  • 3 tablespoons vegetable oil
  • 1 tablespoon Asian sesame oil
  • 1 cup chicken broth
  • 1/2 cup dry white wine
  • 2 teaspoons fresh lemon juice
Directions
  1. Peel ginger, slice and then finely mince
  2. Peel and thinly slice shallot
  3. Peel and mince garlic
  4. Trim pork tenderloins of all fat and silverskin
  5. Stir together 2 tablespoons minced ginger and honey
  6. Season pork with salt and pepper and spread honey all over
  7. Let stand 30 minutes
  8. Preheat oven to 400 degrees
  9. Heat oil in a large skillet over medium high heat
  10. Brown pork on all sides, about 6 minutes total
  11. Transfer to a parchment lined baking sheet and roast 2 minutes
  12. Let stand 5 minutes; then slice
  13. Meanwhile, heat sesame oil in the pork skillet and saute shallot, garlic and 1 tablespoon minced ginger for 1 to 2 minutes
  14. Add broth, wine and lemon juice; bring to a boil and reduce by half
  15. Serve sauce over pork.
