ORANGE AND HONEY PORK AND GREEN BEAN TOSS
  • Ingredients
  • 1-inch piece fresh ginger
  • 1 pound thin green beans
  • 1 pork tenderloin
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon vegetable oil
  • Sauce: 1/3 cup fresh orange juice
  • 1 teaspoon rice vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon grated orange zest
  • 1 clove garlic
Directions
  1. Peel ginger and mince
  2. Trim green beans and cut in half crosswise
  3. Peel and mince garlic
  4. Trim pork of all fat and silver skin and slice
  5. Cut slices into thin strips
  6. Combine ginger, soy sauce, honey and red pepper flakes and toss with pork
  7. Let stand 30 minutes
  8. Drop green beans in a pot of boiling water and cook 4 to 6 minutes until tender
  9. Rinse in cold water to stop cooking
  10. Heat oil in a wok over medium high heat
  11. Add pork, reserving marinade in dish
  12. Cook until done, about 5 minutes
  13. Add green beans and toss to warm
  14. Add reserved marinade and sauce ingredients and cook until thickened
  15. Season with salt and pepper and serve immediately.
