ITALIAN SAUSAGE SOUP
  • Ingredients
  • 2 cloves garlic
  • 1 medium onion
  • 3/4 pound zucchini
  • 1 yellow bell pepper
  • 1 pound sweet Italian sausage links
  • 1 tablespoon olive oil
  • 1/2 cup dry white wine or vermouth
  • 5 cups chicken broth
  • 1 (16-ounce) can diced tomatoes
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Freshly ground pepper
  • 1/2 cup pastini (tiny Italian soup pasta)
  • Freshly grated Romano cheese
Directions
  1. Peel garlic and mince
  2. Chop onion
  3. Cut zucchini and yellow pepper into medium dice
  4. Place sausages in a saucepan and cover with cold water
  5. Boil and then simmer for 10 minutes
  6. Remove sausages and cool slightly
  7. Slice sausages into 1/2- inch thick slices. Heat olive oil in a large pot and add sliced sausages, onion and garlic
  8. Saute until onion is tender and sausages browned lightly, about 5 minutes
  9. Add wine and stir until almost evaporated. Stir in zucchini, pepper, broth, tomatoes with juices, basil, oregano and pepper to taste
  10. Bring to a boil
  11. Add the pastini and cook 20 minutes or until pasta and vegetables are tender
  12. Serve with cheese.
