CREAMY LINGUINE, BACON AND SUN-DRIED TOMATO TOSS
Ingredients
3 large shallots
1/2 cup drained oil-packed sun-dried tomatoes
8 sprigs Italian parsley
8 slices bacon
1 tablespoon olive oil
1 cup whipping cream
1 pound linguine, cooked and drained
1/2 cup freshly grated Parmesan cheese
1/4 cup toasted pine nuts
More cheese for passing
Directions
Chop shallots
Cut sun-dried tomatoes in julienne strips
Remove parsley leaves and finely chop
Chop bacon
Heat oil in a large heavy skillet over medium heat
Add the bacon and cook until beginning to color, about 6 minutes
Drain off fat
Add shallots and stir 2 minutes
Add cream and bring to a boil
Turn off the heat and add tomatoes
Toss hot cooked linguine with sauce and 1/2 cup Parmesan
Season to taste with salt and pepper
Serve sprinkled with pine nuts and parsley, passing additional cheese separately.
