CREAMY LINGUINE, BACON AND SUN-DRIED TOMATO TOSS
  • Ingredients
  • 3 large shallots
  • 1/2 cup drained oil-packed sun-dried tomatoes
  • 8 sprigs Italian parsley
  • 8 slices bacon
  • 1 tablespoon olive oil
  • 1 cup whipping cream
  • 1 pound linguine, cooked and drained
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • More cheese for passing
Directions
  1. Chop shallots
  2. Cut sun-dried tomatoes in julienne strips
  3. Remove parsley leaves and finely chop
  4. Chop bacon
  5. Heat oil in a large heavy skillet over medium heat
  6. Add the bacon and cook until beginning to color, about 6 minutes
  7. Drain off fat
  8. Add shallots and stir 2 minutes
  9. Add cream and bring to a boil
  10. Turn off the heat and add tomatoes
  11. Toss hot cooked linguine with sauce and 1/2 cup Parmesan
  12. Season to taste with salt and pepper
  13. Serve sprinkled with pine nuts and parsley, passing additional cheese separately.
