MUSTARD MARINATED STEAK WITH ARTICHOKE RELISH
MUSTARD MARINATED STEAK WITH ARTICHOKE RELISH
Ingredients
4 cloves garlic
2 roasted red peppers
1 (6-ounce) jar marinated artichokes
2 tablespoons minced fresh basil
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 teaspoon sugar
1 teaspoon salt
1/8 teaspoon freshly ground pepper
1/4 cup olive oil
1-1/2 pounds top sirloin, 1-inch thick
Directions
Peel garlic and mince
Cut roasted peppers in julienne strips
Drain artichoke hearts and pat dry
Cut into medium dice
Stack basil leaves and mince
Whisk garlic, vinegar, mustard, sugar, salt and pepper in a small bowl
Whisk in olive oil
Remove 3 tablespoons to a medium bowl
Add the peppers, artichoke hearts and basil
Cover relish and leave at room temperature 1 hour. Pour remaining marinade over steak and let stand at room temperature 1 hour. Preheat grill
Remove steak from marinade
Grill 6 to 8 minutes per side or to desired doneness
Let steak rest for 7 to 10 minutes before slicing across into thin strips. Serve steaks topped with relish.
