MUSTARD MARINATED STEAK WITH ARTICHOKE RELISH
  • Ingredients
  • 4 cloves garlic
  • 2 roasted red peppers
  • 1 (6-ounce) jar marinated artichokes
  • 2 tablespoons minced fresh basil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1/4 cup olive oil
  • 1-1/2 pounds top sirloin, 1-inch thick
Directions
  1. Peel garlic and mince
  2. Cut roasted peppers in julienne strips
  3. Drain artichoke hearts and pat dry
  4. Cut into medium dice
  5. Stack basil leaves and mince
  6. Whisk garlic, vinegar, mustard, sugar, salt and pepper in a small bowl
  7. Whisk in olive oil
  8. Remove 3 tablespoons to a medium bowl
  9. Add the peppers, artichoke hearts and basil
  10. Cover relish and leave at room temperature 1 hour. Pour remaining marinade over steak and let stand at room temperature 1 hour. Preheat grill
  11. Remove steak from marinade
  12. Grill 6 to 8 minutes per side or to desired doneness
  13. Let steak rest for 7 to 10 minutes before slicing across into thin strips. Serve steaks topped with relish.
