MUSTARD MARINATED STEAK WITH ROASTED GARLIC AIOLI
  • Ingredients
  • 4 cloves garlic
  • 2 large shallots
  • 4 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 4 tablespoons Dijon mustard
  • 1 tablespoon freshly ground pepper
  • 3 pounds top sirloin steaks,
  • (1-1/2 to 2 inches thick)
  • Roasted Garlic Aioli: 1 head garlic
  • 1 tablespoon olive oil
  • 1 tablespoon reserved steak marinade
  • 1/4 cup mayonnaise
Directions
  1. Peel and mince garlic
  2. Peel shallots and finely chop. Remove thyme and rosemary leaves from stems and mince
  3. Stir all into olive oil
  4. Add the vinegar, mustard and pepper
  5. Reserve 1 tablespoon for aioli
  6. Pour remaining over steak, cover and refrigerate 4 hours
  7. Grill steak 6 to 8 minutes per side
  8. Let rest and slice across the grain. Cut top off whole head garlic and place on a sheet of foil
  9. Drizzle with olive oil
  10. Wrap tightly and roast at 400 degrees for 1 hour
  11. Squeeze out garlic and mash
  12. Mix garlic with reserved marinade and mayonnaise
  13. Serve with steak.
