TARRAGON PECAN CRUSTED SALMON
  • Ingredients
  • 4 (6-ounce) salmon fillets
  • 2 teaspoons orange zest
  • 1/4 cup fresh orange juice
  • 2 tablespoons olive oil
  • 2 teaspoons minced fresh tarragon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter, melted
  • 1 teaspoon honey
  • 1/4 cup fine dry breadcrumbs
  • 1/4 cup finely chopped pecans
  • 2 teaspoons minced Italian parsley
  • 2 teaspoons minced fresh tarragon
Directions
  1. Place fish in a shallow dish
  2. Whisk together orange zest, orange juice, olive oil and 2 teaspoons tarragon
  3. Pour over fish, turning to coat
  4. Marinate in refrigerator for 1 hour
  5. Preheat oven to 425 degrees
  6. In a small dish combine mustard, melted butter and honey
  7. In another dish combine breadcrumbs, pecans, parsley and remaining 2 teaspoons tarragon
  8. Remove salmon from marinade and arrange on a parchment lined baking sheet
  9. Brush with mustard mixture and coat with crumb mixture, pressing crumbs gently to coat
  10. Bake for 12 to 16 minutes or until fish is cooked.
