BAKED SALMON WITH AN OLIVE CRUST
  • Ingredients
  • 1/2 cup Kalamata olives
  • 1/4 cup oil-packed sun-dried tomatoes, drained
  • 3 cloves garlic
  • 3 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 tablespoons olive oil
  • 3 tablespoons Dijon mustard
  • 1 cup panko (Japanese breadcrumbs)
  • 4 (5 to 6 ounce) salmon fillets
Directions
  1. Finely chop the olives and sun-dried tomatoes
  2. Peel garlic and mince
  3. Remove thyme and rosemary leaves from stems and mince
  4. In a medium bowl combine the olives, sun-dried tomatoes, garlic, thyme, rosemary, olive oil and 2 teaspoons mustard
  5. Toss in the breadcrumbs
  6. Preheat oven to 400 degrees
  7. Arrange salmon fillets on a parchment lined baking sheet
  8. Spread with remaining mustard and mound breadcrumb mixture on top
  9. Bake until salmon is just done in center, 12 to 15 minutes.
