DEVILED SALMON WITH CAPERS
  • Ingredients
  • 2 cloves garlic
  • 3 tablespoons capers, rinsed and drained
  • 1 lemon
  • 4 tablespoons Dijon mustard
  • 4 (6-ounce) salmon fillets
Directions
  1. Peel garlic and mince
  2. Coarsely chop the capers
  3. Cut the lemon in half
  4. Cut one half into 4 wedges and squeeze the other half to make 1 teaspoon juice
  5. Preheat broiler
  6. Stir together the garlic, capers, lemon juice and mustard
  7. Arrange salmon fillets on a broiler pan and broil for 4 minutes
  8. Carefully turn fillet over and spread with mustard mixture
  9. Broil 5 to 7 minutes longer or until salmon is cooked through.
