DEVILED SALMON WITH CAPERS
Ingredients
2 cloves garlic
3 tablespoons capers, rinsed and drained
1 lemon
4 tablespoons Dijon mustard
4 (6-ounce) salmon fillets
Directions
Peel garlic and mince
Coarsely chop the capers
Cut the lemon in half
Cut one half into 4 wedges and squeeze the other half to make 1 teaspoon juice
Preheat broiler
Stir together the garlic, capers, lemon juice and mustard
Arrange salmon fillets on a broiler pan and broil for 4 minutes
Carefully turn fillet over and spread with mustard mixture
Broil 5 to 7 minutes longer or until salmon is cooked through.
