PESTO CRUMB TOPPED HALIBUT
  • Ingredients
  • 1 green onion
  • 1 clove garlic
  • 2 tablespoons prepared pesto sauce
  • 1/4 cup mayonnaise
  • 2 cups fresh breadcrumbs
  • 4 (6-ounce) halibut fillets
Directions
  1. Trim green onion and mince
  2. Peel and mince garlic
  3. Stir green onion and garlic into pesto and stir that mixture into the mayonnaise
  4. Preheat oven to 375 degrees
  5. Arrange halibut on a parchment-lined baking sheet
  6. Spread the top of each halibut fillet with 1/4 of the pesto mixture
  7. Mound the breadcrumbs on top
  8. Bake halibut for 18 minutes or until cooked through and the breadcrumbs are golden.
