CREAMY CANTALOUPE MOUSSE
  • Ingredients
  • 1 large ripe cantaloupe
  • 1/2 ripe honeydew melon
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons cold water
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla
  • 1 cup heavy whipping cream, whipped
Directions
  1. Wash outside of cantaloupe well with soap and water
  2. Cut in half and scoop out seeds
  3. Cut half the cantaloupe into chunks and puree to make 1-1/2 cups
  4. Cut the remaining cantaloupe into balls or dice; cover and refrigerate
  5. Peel honeydew melon and cut into thin wedges
  6. Cover and refrigerate
  7. For mousse, stir gelatin into water in a 2 cups glass measuring cup
  8. Let stand 5 minutes to firm up
  9. Heat in the microwave on HIGH for 30 seconds to melt
  10. Stir gelatin into cantaloupe puree
  11. Stir in sugar, salt, lemon zest and juice and vanilla
  12. Cover and chill until partially set
  13. With mixer whip melon mixture until light and fluffy
  14. Chill until mixture mounds slightly
  15. Fold in whipped cream and reserved melon balls
  16. Chill until set, about 4 hours
  17. Serve spooned over honeydew melon slices.
