ORANGE GINGER BROWNIES
  • Ingredients
  • 1 cup pecans
  • 4 ounces bittersweet chocolate
  • 2 ounces crystallized ginger
  • 1 cup unsalted butter
  • 4 large eggs
  • 1-1/4 cups sugar
  • 2 teaspoons vanilla
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon salt
  • 1/2 cup flour
  • Vanilla ice cream
Directions
  1. Preheat oven to 350 degrees
  2. Toast pecans for 8 minutes
  3. Let cool and then coarsely chop
  4. Cut chocolate into small pieces
  5. Cut ginger into fine dice
  6. Butter a 9 x 12 inch baking pan
  7. Place chocolate in a bowl with the butter and melt on HIGH power in the microwave for 1-1/2 to 2 minutes, stirring after 1 minute
  8. Cool to lukewarm. Beat eggs and sugar with mixer until thick and light colored
  9. Beat in chocolate mixture and then stir in vanilla, orange zest, ginger, salt and nuts
  10. Fold in flour and spread in prepared pan
  11. Bake for 20 to 25 minutes or until just set in center
  12. Cool; cut into squares and serve with ice cream.
