WALNUT TORTE WITH MOCHA CREAM TOPPING
  • Ingredients
  • 1 cup walnuts
  • 1 cup graham cracker crumbs
  • 3 egg whites
  • 1/8 teaspoon cream of tartar
  • 1 teaspoon baking powder
  • 1 cup sugar
  • Mocha Cream:
  • 1 cup heavy cream
  • 2 tablespoon powdered sugar
  • 1 teaspoon instant espresso
  • 1 tablespoon Kahlua or 1/2 teaspoon vanilla
Directions
  1. Preheat oven to 350 degrees
  2. Butter and flour a 9 inch pie plate
  3. Finely chop the walnuts and combine with graham crackers
  4. Beat egg whites with cream of tartar until soft peaks form
  5. Slowly beat in the baking powder and then the sugar 1 tablespoon at a time
  6. The meringue may be more syrupy than usual
  7. Fold in the graham cracker crumbs and nuts
  8. Spread in pie plate
  9. Bake for 30 minutes or until puffed and set
  10. Cool several hours on a rack
  11. One or two hours before serving whip cream with powdered sugar, espresso and Kahlua until stiff
  12. Spread over torte and chill until serving time.
